The State of Texas allows the electronic sealing and signing of Architectural documents.  What software are the rest of you using to seal your documents?

CoSign Desktop. I've recently researched digital signatures and selected CoSign. It is designed for this purpose and is easy to use. The cost is reasonable ($120/year subscription, which includes the certificate authority.) You can import your signature as a JPG and there are multiple display options. If you assemble the drawings as one PDF using a program like PDFCreator, you can easily flip through the set and sign them consecutively using the CoSign OmniSign. The only problems I've discovered are that there are no options for vertical signatures and the seal is partially obscured by the signature, so placement of the signature is critical.
